So it's Enrichment time again. I am in charge of the food and I love it! Well, no matter how prepared I am it seems to be a bit of a stress. LOL So, about a month ago I started looking into ideas for the food. At the time it was in the 90's, so I wanted something cool and summery. I searched the web and my recipes. I found about 10 that I wanted to try. I started with the first and took it to a few people to "test". I only heard back from one of the people that tested and it was a split decision, one liked it the other said it was okay. Davis and I didn't care for it either, so I was back at the drawing board. I just happened to see a recipe at my Mom's house as I flipped through the paper and coupons. I bought the stuff and tried again. This time I just took it to the Sweet's since no one gave me comments but them (THANKS FOR BEING MY GUINEA PIGS SAM AND CARRIE!!!) I also know that they LOVE desserts and would appreciate me knocking on their door every few days. LOL So Carrie and I tasted first and we LOVED it, but thought, how could it be better?!?! Then Sam came home and polished off the plate. He then told he it was awful and he would dispose of the rest if I brought it over. LOL gotta love Sam. Well, we had it for dessert with the Warner's and they really liked it. We even had some of the "other" dessert leftover and again, one really liked it the others were so-so. So I decided to make the changes Carrie and I talked about and made another batch. These batches make two whole pies. Oh I also didn't mention that Davis commented it was the best dessert he'd ever had! Well, I had an enrichment planning meeting so I took them with me to that and got big thumbs up. I also took it back to the Sweet's and got their opinions. I liked both versions, but was torn on which one to make. I decided on the first and bought the stuff...on wednesday night on my way home from work. I had forgotten that I was going on Tanner's field trip the next day, so I had to whip out all 4 batches in one night. To make my life "easier" my Mom came over with my niece and nephew to make calzones...thus it was put off a bit longer. It's all good though. I quickly chopped and chopped strawberries (over 4 lbs. to be exact) My wonderful niece helped me whip up all the pies (thanks Lexi Lou!) and by the time they left I was nearly done. I soon put the kids to bed and realized I had a "craft" to do for enrichment...DOH!!!! No big deal, it should be easy, right?!?!!? Well, around midnight, completely exhausted and ready for bed, I was done!!!!
Here are all of my creations, ready to go. 8 pies- 4 on a graham cracker crust-4 on Oreo....4 more lbs of strawberries to cut up, 3 tubs of cool whip and 10 HOME crafts.

Pies and such!!!! OH, my 90 degree weather for such a summery treat is no longer, we rained all week and are lucky to be in the 60's....grrrr, that's what I get for "planning ahead". Utah springs are frustrating!

HOME CRAFT...aren't these adorable. They seriously took FOREVER, but they are cute!

Close-up of the one I made for me. I am supposed to put pictures in it, but have none right now since my computer crashed and I haven't had time to transfer them from my ZUNE.

Oh and Ady was asking WHY I was taking pictures of things, not her. So here she is. To make my story and Thursday COMPLETE!! After Tanner got home from school I said, "Tanner, watch the kids for a minute I'm going to run and get the mail." I ran out and realized the mail is much further than I realized. As I am walking back some guy pulls up in front of our house and yells, "Are you missing a little girl?" Uh, I don't think so. So I run to 4800 West (for those that don't know this is a very busy street near our house!) I look all the way down to the next street and there's a crowd of about 5 people. In the middle is my sweet Adylin. Needless to say I was SOOOO embarrassed. I should've been scared, but I was REALLY humiliated! I grabbed her and hurried home. UGH!!!! So, I am VERY ready to be leaving for the evening and letting Davis take over. I'm counting down the minutes for him to come home. I NEED A BREAK!!!! LOL So, here's my princess or as Heather Swanson calls Danny...."My SPIRITED child!!!!" Oh and yes, she only had a diaper and shirt on....I'm sure these people thought I was the worst parent EVER!!!!!!!!
